Palattes was founded by owner Paddy Hosey in June 2025. When Paddy was out of work due to an injury, he needed to find income somewhere else.

This is when he came up with the idea of setting up a small business of serving coffees. In his local area of Emo in County Laois, Paddy decided to set up a old van which he did up himself and set it in the GAA grounds.

In keeping it local he wanted to sell coffees and treats to people coming and going to games, walking around Emo Court or just stopping by.
